Ha! I was kinda wondering myself, though you have to admit - the bigger question is really, "who cares?" (Obviously, us, but we're geeks, so we have an excuse.) That thing looks awful no matter what they call it.
I'm looking forward to it as it's just the sort of movie I can take my 2.5 year old daughter to (in 2D 35mm) and not worry about whether she's into it. If she likes it, super. If not and she wants to leave, no harm no foul. Of course, she generally enjoys the experience on the rare occasions, just make sure to provide plenty of unbuttered popcorn.
I did a little investigating and it seems the title change happened between March 15th and April 15th. Which would indicate that the original name maybe didn't test well, or the film didn't test well, and Paramount, who's basically penniless 'til Iron Man 2 comes out (they can't even finance an Anchorman sequel), is trying to maximize ticket sales by adding "The Final Chapter" to the title. Kinda like "Friday the 13th: The Final Chapter." They also did something similar with "Star Trek Nemesis" too, but it was the tagline that changed. Didn't work in that scenario.
That was my guess too RL, it's just kinda shocking that they'd completely alter the title in such a cloak and dagger way. The reviews are certainly mediocre, so I'm guessing they are attempting to build momentum via finality. I still liked the theoretical name of Shrek 5: Shrek Takes the Fifth.
I actually tossed off an email to my Paramount contact, so if the people he 'cc'ed it to get back to me, I'll let everyone know.
